Wine and Food Pairings are like a relationship – it’s all about finding a pairing that complements each other’s difference and you don’t want two identical copies of the same person. Throughout your life you can go on date with many different types of people or you can stick to only ‘Your Type’ for life. 

One knows that his/her interest has entered to the next level when one starts to match out the food that goes hand in hand with the wine. Though the pairing thing is too much stressed out and debated as well. One needs to learn what to look for in a recipe in order to make great wine matches because a great food and wine pairing creates a balance between the component of dish and characteristics of a wine. 

The pairing is as complex as the basics are simple. One can have the tried-and-true methodologies to produce consistently great pairings and with time one gets more familiar with different wines, he/she becomes more confident and can experiment breaking the rules! 

 Basics go like:

  • The wine should be sweeter than the food

  • The wine must be more acidic than food.

  • The wine should have the same flavor intensity as the food.

There are two major types of Pairing:

  • Congruent: A strong overlap of flavor compounds between food and wine which intensifies the overlapping qualities.

  • Complementary: There are only a few shared flavor compounds between the food and wine that means going for contrast and balance.

Let’s go with 5 basic Wine Characteristics: Sweetness. Acidity. Tannin. Alcohol. Body.

Basic taste components of various Wines:

  • Red wines have more bitterness.

  • White, Rose and Sparkling wines have more acidity.

  • Sweet wines have more sweetness.

Basic taste components of various types of food dishes:

  • Acidic food: Match with high acid wines. (Citrus Vinaigrette & Tomato based sauce dishes)

  • Rich food: Match with high tannin reds/high acid whites. (Nut based sauce dishes, Macaroni & Cheese)

  • Spicy food: Match with low alcohol or sweet wines. (Salsa, Spicy curries, Hot sauce dishes)

  • Bitter food: Match with low no tannin or sweet wines. (Chocolate base dishes and grapefruit, etc.)

  • Sweet food: Match with sweet wines. (Cookies, Cakes, Ice creams, Milk chocolate, etc.)

  • Salty food: Match with acidic or fruity wines. (Mixed nuts, Popcorn, etc.)

Pair lighter wine with lighter dishes, bolder wines with heavy dishes.
